We found these unusual rings at a Renaissance Faire, of course.  As described by their maker: "This ring features the dragon of the East, messenger of heavenly law, facing the dragon of the West, keeper of Earth knowledge. Their fiery breaths link the connection of mind, body, and spirit to the cycle of birth, life, and death ; binding them in a timeless circle as one."  I, of course, fell in love with the dragons; the Celtic knots also struck us both as appropriate.  The ring pictured is Dan's; mine is gold, and narrower, but just as detailed.
